Ingredients

  • 1 pound lean ground beef, 85/15 or 90/10
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup cottage cheese, full-fat or low-fat
  • 2 tablespoons hot honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh cilantro, chopped


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. Toss the sweet potatoes with olive oil, salt, and black pepper.
  4. Spread the sweet potatoes evenly on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
  5. While the sweet potatoes roast, heat a large skillet over medium-high heat.
  6. Add the ground beef and break it apart with a spoon as it cooks.
  7. Cook the beef until fully browned, then drain any excess fat.
  8. Season the beef with garlic powder, onion powder, paprika, salt, and black pepper.
  9. Divide the roasted sweet potatoes among serving bowls.
  10. Top each bowl with a generous portion of the seasoned ground beef.
  11. Add a dollop of cottage cheese to each bowl.
  12. Drizzle the hot honey over the bowls.
  13. Garnish with freshly chopped cilantro and serve immediately.
