Description

Ingredients

  • 1 pound Chicken Breasts, diced
  • 1/4 cup Hot Honey
  • 1 cup Bell Peppers, sliced (your choice of colors)
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Rice (white or brown)
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • Fresh Herbs, such as cilantro or parsley, for garnish


Instructions

  1. Cook the rice according to package instructions. While that’s underway, you can focus on the chicken.
  2. Prepare the chicken: In a large skillet, heat olive oil over medium flame. Once hot, add the diced chicken, seasoning with salt and pepper. Sauté until the chicken is golden brown and fully cooked, about 7-10 minutes.
  3. Sauté the chopped onion, bell peppers, and garlic in the skillet. Cook until the vegetables are tender, about 5 minutes.
  4. Add the hot honey, stirring to combine everything. Let it simmer for another couple of minutes, allowing the flavors to meld beautifully.
  5. Serve the chicken and vegetable mixture over the rice. Garnish with fresh herbs for added freshness.
