Description

A delightful blend of savory and sweet, this Hot Honey Chicken Bowl combines tender chicken with a spicy honey glaze, perfect for cozy autumn evenings.

Ingredients

  • 2 cups cooked rice (white or brown)
  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup hot honey
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Cook the Rice: Begin by cooking your rice according to the package instructions. Set it aside once it is fluffy and ready.
  2. Prepare the Chicken: In a bowl, season the chicken thighs with salt, pepper, and garlic powder. Drizzle olive oil over them, ensuring they are well-coated.
  3. Sauté the Veggies: In a skillet over medium heat, add a bit more olive oil and toss in the sliced onions and bell peppers. Sauté them for about 5 minutes or until they are softened.
  4. Cook the Chicken: Push the vegetables to one side of the skillet and add the chicken thighs. Cook for about 6-7 minutes on each side, until golden brown and fully cooked.
  5. Create the Hot Honey Sauce: In the last few minutes of cooking, drizzle the hot honey over the chicken and allow it to caramelize slightly.
  6. Assemble the Bowl: On a plate or in a bowl, layer the cooked rice, topped with the sautéed peppers and onions, and add the hot honey chicken on top. Finish with fresh cilantro and a wedge of lime for added zest.

Notes

For a gluten-free option, substitute regular soy sauce with tamari and ensure your hot honey is gluten-free. Adjust spiciness by adding more or less hot honey as desired.
