Description

A comforting bowl of succulent chicken, sweet and spicy honey sauce, and vibrant vegetables, perfect for cozy weeknight dinners.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup hot honey (or regular honey with a dash of hot sauce)
  • 1 tablespoon olive oil
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • 1 cup cooked rice (white or brown)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)


Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Once hot, add the chicken and cook for about 6-7 minutes per side, or until fully cooked.
  2. Add the honey: Drizzle the hot honey over the cooked chicken. Let it simmer in the honey glaze for about 2-3 minutes.
  3. Sauté the vegetables: In the same skillet, push the chicken to one side and add the sliced bell peppers and broccoli florets. Sauté for about 5 minutes until slightly tender.
  4. Assemble the bowl: In a serving bowl, place a bed of cooked rice. Slice the honey-glazed chicken and arrange it on top, adding the sautéed vegetables around it.
  5. Garnish and serve: Top with fresh cilantro if desired, and serve immediately.

Notes

Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F. Feel free to add other vegetables like snap peas or carrots for variation.
