Description

Ingredients

  • 2 cups cooked rice (white or brown)
  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup hot honey
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish


Instructions

  1. Cook the rice according to the package instructions. Set it aside once it is fluffy and ready.
  2. Prepare the chicken by seasoning the thighs with salt, pepper, and garlic powder. Drizzle olive oil over them, ensuring they are well-coated.
  3. Sauté the sliced onions and bell peppers in a skillet over medium heat with a bit more olive oil for about 5 minutes or until softened.
  4. Cook the chicken thighs in the skillet, pushing vegetables to one side, for about 6-7 minutes on each side until golden brown and fully cooked.
  5. Create the hot honey sauce by drizzling hot honey over the chicken during the last few minutes of cooking, allowing it to caramelize.
  6. Assemble the bowl by layering cooked rice, sautéed vegetables, and hot honey chicken. Finish with fresh cilantro and a lime wedge.
