Ingredients

- 1 lb boneless, skinless chicken thighs
- 1/4 cup hot honey
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 small onion, sliced

- Salt and pepper to taste

Instructions
- Cook the rice according to the package instructions. Set it aside once it is fluffy and ready.
- Prepare the chicken by seasoning the thighs with salt, pepper, and garlic powder. Drizzle olive oil over them, ensuring they are well-coated.
- Sauté the sliced onions and bell peppers in a skillet over medium heat with a bit more olive oil for about 5 minutes or until softened.
- Cook the chicken thighs in the skillet, pushing vegetables to one side, for about 6-7 minutes on each side until golden brown and fully cooked.
- Create the hot honey sauce by drizzling hot honey over the chicken during the last few minutes of cooking, allowing it to caramelize.
- Assemble the bowl by layering cooked rice, sautéed vegetables, and hot honey chicken. Finish with fresh cilantro and a lime wedge.
