Ingredients

- 1 cup bell peppers, sliced (any color)
- 1 cup broccoli florets
- 1 cup cooked rice (white or brown)
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
Instructions
- Prepare the chicken: Begin by seasoning the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Once hot, add the chicken and cook for about 6-7 minutes per side, or until fully cooked.
- Add the honey: Once the chicken is cooked through, drizzle the hot honey over it. Let the chicken simmer in the honey glaze for about 2-3 minutes, ensuring it is well coated.
- Sauté the vegetables: In the same skillet, push the chicken to one side and add the sliced bell peppers and broccoli florets. Sauté them for about 5 minutes until they are slightly tender.
- Assemble the bowl: In a serving bowl, place a bed of cooked rice. Slice the honey-glazed chicken and arrange it on top of the rice, adding the sautéed vegetables around it.
- Garnish and serve: Top with fresh cilantro if desired, and serve immediately.
