Description

A satisfying meal prep bowl combining sweet and spicy flavors with chicken, vibrant veggies, and a base of rice or quinoa.


Ingredients

  • 1 lb of chicken breast, cut into bite-sized pieces
  • 2 tablespoons of honey
  • 2 tablespoons of Sriracha sauce
  • 1 tablespoon of soy sauce (or a gluten-free alternative)
  • 1 tablespoon of sesame oil
  • 2 cups of broccoli florets
  • 1 bell pepper, sliced
  • 1 cup of cooked jasmine rice or quinoa
  • Sesame seeds and green onions for garnish


Instructions

  1. Marinate the chicken: In a bowl, combine honey, Sriracha, soy sauce, and sesame oil. Add the chicken pieces and let them marinate for at least 15 minutes to absorb all the flavors.
  2. Cook the chicken: Heat a skillet over medium-high heat and add the marinated chicken. Cook until the chicken is golden brown and cooked through, about 8-10 minutes.
  3. Sauté the vegetables: In the same skillet, add the broccoli florets and sliced bell pepper. Stir-fry for about 5 minutes until they are just tender but still vibrant in color.
  4. Assemble the bowls: Divide the cooked rice or quinoa into four meal prep containers. Top each with the chicken and veggies. Drizzle any remaining sauce over the top.
  5. Garnish and store: Sprinkle with sesame seeds and sliced green onions. Allow the bowls to cool before sealing and storing in the fridge.
