Ingredients

  • Salt and pepper to taste
  • 1 cup jasmine rice (or brown rice)
  • 2 cups water or low-sodium chicken broth
  • 1 avocado, diced
  • 1 cup corn (fresh or frozen)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped (optional for garnish)
  • Lime wedges (for serving)


Instructions

  1. Marinate the Chicken: In a mixing bowl, combine honey, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add chicken thighs or breast, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to overnight for more flavor).
  2. Cook the Rice: Rinse the jasmine or brown rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water (or chicken broth). Bring to a boil. Once boiling, lower the heat, cover, and simmer for about 15 minutes (or according to package instructions for brown rice) until the rice is tender and water is absorbed.
  3. Prepare the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-8 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Let the chicken rest for 5 minutes before slicing into bite-sized pieces.
