Ingredients
- 4 pieces of fresh cod fillets (about 6 ounces each)
- 1 cup all-purpose flour
- 1 cup cold sparkling water (or club soda)
- 1 teaspoon baking powder
- 1 teaspoon salt
- Freshly ground black pepper, to taste
- Oil, for frying (canola or vegetable oil works best)
- 4 large russet potatoes
- Salt to taste
- Optional: malt vinegar, for serving
- Fresh lemon wedges
- Tartar sauce (optional)
Instructions
- Prepare the potatoes by peeling and cutting them into thick chips (about 1/2 inch wide).
- Soak the chips in water for 30 minutes to remove excess starch.
- In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
- Gradually add the cold sparkling water, mixing until smooth.
- Heat oil over medium-high heat until it reaches 350ยฐF (175ยฐC).
- Drain the soaked chips and pat them dry. Fry them in batches for about 5-7 minutes until golden.
- Remove the chips and season with salt while still hot.
- Dip each cod fillet into the batter and carefully place it in the hot oil.
- Fry the cod for about 4-5 minutes on each side until golden and crisp.
- Serve hot, garnished with lemon wedges and accompanied by tartar sauce and malt vinegar if desired.
Notes
Use fresh fish for the best flavor and control the oil temperature for perfect frying.
