Description

A hearty and comforting casserole with layers of ground beef, vegetables, and potatoes, perfect for chilly evenings.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, thinly sliced
  • 2 cups mixed vegetables (frozen or fresh, such as carrots and peas)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your favorite type)
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish (like parsley)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef, chopped onion, and minced garlic in a skillet over medium heat until the beef is browned. Drain excess fat and season with salt and pepper.
  3. Mix the beef mixture, cream of mushroom soup, and mixed vegetables in a large bowl.
  4. Layer half of the thinly sliced potatoes in a greased casserole dish. Spread half of the beef and vegetable mixture over the potatoes. Repeat with the remaining potatoes and beef mixture.
  5. Add the shredded cheese evenly over the top layer.
  6. Bake covered with aluminum foil for 45 minutes, then remove the foil and bake for an additional 15–20 minutes until the potatoes are tender and the cheese is bubbly and golden.

Notes

For a lighter version, replace ground beef with lean turkey. Use starchy potatoes for a fluffier texture.
