Ingredients
- 2 cups cooked quinoa
- 1 cup egg whites (or whole eggs, if preferred)
- 1 cup spinach, chopped
- 1 cup diced bell peppers (your choice of color)
- 1 cup cooked turkey sausage or a halal chicken sausage alternative
- 1/2 cup shredded cheese (cheddar or your preferred kind)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: avocado, salsa, or hot sauce for topping
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped spinach and diced bell peppers. Sauté for about 3-4 minutes until the vegetables soften.
- Stir in the cooked turkey sausage, allowing it to heat through for 2-3 more minutes.
- Pour in the egg whites (or whole eggs), mixing everything together. Cook until the eggs are set, seasoning with salt and pepper to taste.
- Combine the cooked quinoa with the egg mixture in a large mixing bowl. Stir in half of the shredded cheese, reserving the other half.
- Divide the mixture evenly among individual freezer-friendly containers or meal prep bowls.
- Top each bowl with the remaining cheese.
- Cool completely before sealing with airtight lids.
- Label each bowl with the date for easy tracking.
