Ingredients
- 2 cups cooked, shredded chicken (or use rotisserie chicken for convenience)
- 2 cups marinara sauce
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup cooked whole grain pasta (or gluten-free pasta if desired)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the shredded chicken, marinara sauce, cottage cheese, half of the mozzarella cheese, Italian seasoning, salt, and pepper in a large mixing bowl until well blended.
- Layer half of the pasta in a greased 9×13 inch baking dish, followed by half of the chicken mixture and half of the remaining mozzarella cheese. Repeat layers and finish with the rest of the mozzarella and Parmesan cheese on top.
- Bake covered with foil for 25 minutes, then remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.
- Garnish with fresh basil and serve hot.
