Ingredients
- 2 medium sweet potatoes, cubed
- 1 cup green or brown lentils, rinsed and drained
- 4 cups vegetable broth or water
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- ½ teaspoon cayenne pepper (optional)
- Fresh herbs (like parsley or cilantro) for garnish
Instructions
- Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes in a bowl with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread them on a baking sheet lined with parchment paper.
- Roast the Sweet Potatoes: Roast the sweet potatoes in the preheated oven for about 25–30 minutes or until they are tender and slightly caramelized, flipping halfway through for even cooking.
- Cook the Lentils: In a medium saucepan, combine the rinsed lentils and vegetable broth or water. Bring to a boil, then reduce the heat and let it simmer for about 20–25 minutes, or until the lentils are tender but not mushy. Drain any excess liquid.
- Combine and Season: Once the sweet potatoes are roasted and the lentils are cooked, combine them in a large mixing bowl. Add cayenne pepper for an added kick if desired. Toss everything together gently to mix the flavors.
