Description

A nourishing and delicious bowl that blends nutty lentils, sweet potatoes, and seasonal spices for a cozy fall meal.

Ingredients

  • 2 medium sweet potatoes, cubed
  • 1 cup green or brown lentils, rinsed and drained
  • 4 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • ½ teaspoon cayenne pepper (optional)
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes in a bowl with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread them on a baking sheet lined with parchment paper.
  2. Roast the Sweet Potatoes: Roast the sweet potatoes in the preheated oven for about 25–30 minutes or until they are tender and slightly caramelized, flipping halfway through for even cooking.
  3. Cook the Lentils: In a medium saucepan, combine the rinsed lentils and vegetable broth or water. Bring to a boil, then reduce the heat and let it simmer for about 20–25 minutes, or until the lentils are tender but not mushy. Drain any excess liquid.
  4. Combine and Season: Once the sweet potatoes are roasted and the lentils are cooked, combine them in a large mixing bowl. Add cayenne pepper for an added kick if desired. Toss everything together gently to mix the flavors.
  5. Serve and Garnish: Serve your Healthy Sweet Potato Lentil Bowl warm, topped with fresh herbs for a pop of color and flavor.
