Description

A comforting and nutritious Low Carb Casserole perfect for family gatherings during the fall season.


Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 2 cups broccoli florets
  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the chicken: In a large skillet, heat olive oil over medium heat, add diced chicken, seasoned with salt, pepper, garlic powder, and onion powder. Cook until browned and cooked through, about 5-7 minutes.
  3. Combine the cooked chicken, broccoli florets, cauliflower rice, softened cream cheese, and chicken broth in a large mixing bowl. Stir until well mixed.
  4. Add half of the shredded cheddar cheese into the mixture.
  5. Transfer the mixture into a greased 9×13 inch baking dish and spread it evenly.
  6. Top with the remaining cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
