A nourishing twist on traditional burrito night, this Healthy Chicken Burrito Casserole blends spices and fresh ingredients for a wholesome meal.
Ingredients
- 2 cups cooked, shredded chicken
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 ½ cups cooked brown rice
- 1 can diced tomatoes with green chilies
- 1 cup shredded low-fat cheese (like Monterey Jack or Cheddar)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- ½ cup diced bell peppers, any color
- ¼ cup chopped cilantro
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Combine the shredded chicken, black beans, corn, cooked brown rice, diced tomatoes (with their juice), half of the cheese, cumin, chili powder, salt, pepper, bell peppers, and cilantro in a large bowl. Mix well until all ingredients are evenly combined.
- Pour the chicken mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining cheese on top.
- Bake in your preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it sit for a few minutes before serving, allowing it to set up a bit.
