Description

Hearty zucchini boats stuffed with seasoned ground beef, herbs, and cheese, perfect for a cozy fall meal.


Ingredients

  • 4 medium zucchinis
  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded mozzarella cheese (or your favorite cheese)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the zucchinis by washing and slicing them in half lengthwise, then scoop out the seeds and some flesh to create small boats.
  3. Cook the chopped onion in a skillet over medium heat until translucent, then add minced garlic for one additional minute.
  4. Add the ground beef and cook until browned, breaking it into small pieces.
  5. Stir in the diced tomatoes, Italian seasoning, salt, and pepper, and let simmer for 5-7 minutes.
  6. Take the skillet off the heat and mix half of the mozzarella cheese into the beef mixture, then fill each zucchini boat with this mixture.
  7. Arrange the stuffed zucchini on a baking sheet and top with the remaining mozzarella cheese.
  8. Bake for 20-25 minutes, or until the zucchini is tender and the cheese is bubbly.
  9. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

Select firm zucchinis for best texture. Avoid overstuffing to prevent sogginess.
