Hearty zucchini boats stuffed with seasoned ground beef, herbs, and cheese, perfect for a cozy fall meal.
Ingredients
- 4 medium zucchinis
- 1 pound lean ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded mozzarella cheese (or your favorite cheese)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the zucchinis by washing and slicing them in half lengthwise, then scoop out the seeds and some flesh to create small boats.
- Cook the chopped onion in a skillet over medium heat until translucent, then add minced garlic for one additional minute.
- Add the ground beef and cook until browned, breaking it into small pieces.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper, and let simmer for 5-7 minutes.
- Take the skillet off the heat and mix half of the mozzarella cheese into the beef mixture, then fill each zucchini boat with this mixture.
- Arrange the stuffed zucchini on a baking sheet and top with the remaining mozzarella cheese.
- Bake for 20-25 minutes, or until the zucchini is tender and the cheese is bubbly.
- Remove from the oven, garnish with fresh parsley, and serve warm.
Notes
Select firm zucchinis for best texture. Avoid overstuffing to prevent sogginess.
