Description

Delicious quesadillas filled with seasoned ground beef and gooey cheese, all wrapped in a crispy tortilla.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar or a cheese blend)
  • 4 large flour tortillas
  • 2 tbsp olive oil or cooking spray
  • Chopped bell peppers (optional)
  • Jalapeños for a spicy kick (optional)
  • Fresh cilantro for garnish (optional)


Instructions

  1. Prepare the filling: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon. Drain any excess fat.
  2. Add vegetables and spices: Stir in the chopped onion and garlic, cooking until the onion becomes translucent. Add chili powder, cumin, paprika, salt, and pepper. If you’re adding bell peppers or jalapeños, include them now for extra flavor.
  3. Assemble the quesadillas: Lay one tortilla flat and sprinkle half of the cheese over one half. Spoon half of the beef mixture on top, then add more cheese before folding the tortilla over to create a half-moon shape.
  4. Cook the quesadillas: In the same skillet, add a bit of olive oil. Once heated, lay the folded quesadilla in the skillet. Cook for 3-4 minutes on each side until golden-brown and the cheese is melted. Repeat with the other tortillas.
  5. Serve and enjoy: Slice the quesadillas into wedges and serve warm with salsa, sour cream, or guacamole.

Notes

Don’t overstuff the quesadillas to avoid spills when flipping. Cook in batches for efficiency.
