Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 cups fresh broccoli florets
- 1 tablespoon olive oil
- ½ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Marinate the Chicken: In a medium bowl, combine the olive oil, garlic powder, paprika, salt, and pepper. Add the chicken breasts to the marinade, ensuring they’re well-coated. Let them marinate for at least 30 minutes.
- Prepare the Grilled Chicken: Preheat your grill over medium heat. Grill the marinated chicken for about 6-7 minutes on each side or until their internal temperature reaches 165°F. Remove from grill and let rest before slicing.
- Cook the Broccoli: Heat a tablespoon of olive oil in a large pan over medium heat. Add the broccoli florets and season with salt and pepper. Sauté for about 5-7 minutes or until tender yet crunchy.
- Make the Creamy Garlic Sauce: In a small bowl, whisk together the Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth and creamy.
- Assemble the Bowls: In large bowls, place a scoop of sautéed broccoli and a portion of grilled chicken. Drizzle the creamy garlic sauce on top and garnish with fresh parsley.
Notes
