- 1/2 cup cornstarch
- 2 tablespoons vegetable oil

- 2 tablespoons rice vinegar
- 3 tablespoons sugar
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes (adjust to taste)

Instructions
- Prep the chicken: In a large bowl, coat the chicken pieces with cornstarch until they are well covered.
- Heat the oil: In a skillet or wok, heat the vegetable oil over medium-high heat.
- Cook the chicken: Add the chicken to the skillet in batches and fry until golden brown and crispy, about 5–7 minutes.
- Make the sauce: In the same skillet, add the minced garlic and ginger, sautéing until fragrant, then stir in soy sauce, rice vinegar, sugar, sesame oil, and red pepper flakes.
- Combine: Return the chicken to the skillet and toss it with the sauce until fully coated and heated through.
- Serve: Plate your General Tso’s chicken over rice, garnished with chopped green onions.
