Ingredients
- 1 pound of chicken breast, cut into bite-sized pieces
- 1 cup of cornstarch
- 2 eggs, beaten
- 1/4 cup of soy sauce
- 1/4 cup of rice vinegar
- 1/4 cup of sugar
- 2 tablespoons of sesame oil
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, minced
- 2-4 dried red chilies (depending on your spice preference)
- 3 green onions, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Prepare the chicken by seasoning with salt and pepper. Dip each piece into the beaten eggs, allowing excess to drip off, then coat in cornstarch.
- Heat the sesame oil in a deep skillet or wok over medium-high heat. Add the coated chicken pieces in batches and fry until golden brown, about 4-5 minutes. Remove and place on a paper towel.
- Make the sauce by reducing heat to medium and adding minced garlic, ginger, and dried red chilies. Sauté for about 30 seconds until fragrant, then stir in the soy sauce, rice vinegar, and sugar.
- Combine the fried chicken back into the skillet and stir until well coated. Simmer for a few minutes to meld flavors.
- Serve garnished with chopped green onions. Pair with steamed rice or stir-fried vegetables.
Notes
For extra crispy coating, double dip the chicken pieces. Adjust the spice level by modifying the number of chilies used. Store leftovers separately for up to three days.
