Description
A cozy and hearty dish featuring tender chicken and creamy potatoes infused with rich garlic and parmesan flavors, perfect for autumn cooking.
Ingredients
- 4 boneless, skinless chicken breasts
- 6 medium-sized potatoes, diced
- 1 cup of grated Parmesan cheese
- 6 cloves of garlic, minced
- 1 cup of chicken broth
- 1 teaspoon of Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Place them at the bottom of the crockpot.
- Add garlic and broth: Pour the minced garlic over the chicken, followed by the chicken broth to keep everything moist as it cooks.
- Layer the potatoes: Add the diced potatoes on top of the chicken. This ensures that the potatoes soak up all the delicious flavors.
- Top with Parmesan: Generously sprinkle the grated Parmesan cheese over the potatoes; this will create a delightful cheesy crust.
- Cook: Cover and set your crockpot to low for 360-480 minutes or high for 180-240 minutes, until the chicken is cooked through and tender.
- Serve: Once done, shred the chicken in the crockpot, mixing it with the potatoes and the sauce. Garnish with fresh parsley before serving.
Notes
For best results, opt for fresh chicken breasts and do not overcrowd the crockpot. Adjust seasonings to taste, and consider using a different cheese for variety.
