Description

A warm and hearty French Onion Chicken Orzo Casserole, perfect for autumn gatherings with a symphony of creamy onions, tender chicken, and savory orzo.


Ingredients

  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 large onions, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 cup sour cream
  • 1 cup grated cheese (Swiss or your choice)
  • Salt and pepper to taste


Instructions

  1. Sauté the onions: In a large pan over medium heat, add the olive oil. Once heated, add the sliced onions and cook until they’re soft and caramelized, about 15-20 minutes. Stir frequently to prevent burning.
  2. Prepare the orzo: While the onions are caramelizing, cook the orzo according to package instructions in a pot of boiling salted water. Drain and set aside.
  3. Combine ingredients: In a large bowl, mix the cooked orzo, shredded chicken, caramelized onions, chicken broth, thyme, sour cream, and half of the grated cheese. Season with salt and pepper to taste.
  4. Build the casserole: Preheat your oven to 350°F (175°C). Pour the mixture into a greased casserole dish. Top with the remaining cheese.
  5. Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the cheese is golden and bubbly.

Notes
