Ingredients
- 2 cups orzo pasta
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 large onions, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 cup sour cream
- 1 cup grated cheese (Swiss or your choice)
- Salt and pepper to taste
Instructions
- Sauté the onions: In a large pan over medium heat, add the olive oil. Once heated, add the sliced onions and cook until they’re soft and caramelized, about 15-20 minutes. Stir frequently to prevent burning.
- Prepare the orzo: While the onions are caramelizing, cook the orzo according to package instructions in a pot of boiling salted water. Drain and set aside.
- Combine ingredients: In a large bowl, mix the cooked orzo, shredded chicken, caramelized onions, chicken broth, thyme, sour cream, and half of the grated cheese. Season with salt and pepper to taste.
- Build the casserole: Preheat your oven to 350°F (175°C). Pour the mixture into a greased casserole dish. Top with the remaining cheese.
- Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the cheese is golden and bubbly.
Notes
Feel free to experiment with different cheeses. Prepare a day in advance for enhanced flavors. A gluten-free option is available by substituting regular orzo.
