Ingredients
- 4 boneless, skinless chicken breasts
- 8 ounces of mushrooms, finely chopped
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of fresh spinach, roughly chopped
- 1 cup of breadcrumbs
- 1/2 cup of shredded mozzarella cheese
- 1 teaspoon of dried thyme
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 2 tablespoons of olive oil, divided
- Fresh parsley, chopped for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté onions and garlic in 1 tablespoon of olive oil until translucent.
- Add mushrooms, thyme, salt, and pepper; cook until softened, about 5 minutes.
- Stir in spinach and cook until wilted; remove from heat and cool slightly.
- In a mixing bowl, combine mushroom mixture with breadcrumbs and mozzarella; mix well.
- Take each chicken breast and slice it horizontally to create a pocket; stuff with the filling.
- In the same skillet, sear the stuffed chicken for 3-4 minutes on each side until golden brown.
- Transfer chicken to a baking dish and bake for 20-25 minutes, or until internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes, garnish with parsley, slice, and serve warm.
Notes
Use fresh ingredients for the best flavor. Don’t overstuff the chicken to ensure even cooking.
