A cozy and comforting dish featuring chicken breasts stuffed with a savory mushroom filling, perfect for autumn meals.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces of mushrooms, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of fresh spinach, roughly chopped
  • 1 cup of breadcrumbs
  • 1/2 cup of shredded mozzarella cheese
  • 1 teaspoon of dried thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 2 tablespoons of olive oil, divided
  • Fresh parsley, chopped for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté onions and garlic in 1 tablespoon of olive oil until translucent.
  3. Add mushrooms, thyme, salt, and pepper; cook until softened, about 5 minutes.
  4. Stir in spinach and cook until wilted; remove from heat and cool slightly.
  5. In a mixing bowl, combine mushroom mixture with breadcrumbs and mozzarella; mix well.
  6. Take each chicken breast and slice it horizontally to create a pocket; stuff with the filling.
  7. In the same skillet, sear the stuffed chicken for 3-4 minutes on each side until golden brown.
  8. Transfer chicken to a baking dish and bake for 20-25 minutes, or until internal temperature reaches 165°F (74°C).
  9. Let chicken rest for 5 minutes, garnish with parsley, slice, and serve warm.
