Description
A vibrant dish blending zesty lime flavors and succulent chicken, perfect for gatherings.
Ingredients
- 4 boneless, skinless chicken breasts
- The juice of 2 limes
- Zest from one lime
- ½ cup of fresh cilantro, chopped
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 1 tablespoon of olive oil
- Crumbled tortilla chips for topping (optional)
- Shredded cheese (optional)
Instructions
- Marinate the Chicken: In a large bowl, combine the lime juice, lime zest, chopped cilantro, cumin, chili powder, salt, and pepper. Add the chicken breasts, ensuring they’re evenly coated. Cover and let marinate for at least 30 minutes in the refrigerator.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Once hot, add the marinated chicken breasts. Cook for 6-7 minutes on each side or until the chicken is cooked through (internal temperature should reach 165°F).
- Add Toppings: For a delightful crunch, consider adding crumbled tortilla chips and shredded cheese on top during the last couple of minutes of cooking. Cover the skillet to allow the cheese to melt.
- Serve and Enjoy: Serve the Fiesta Lime Chicken with a side of rice or salad, garnished with extra cilantro and lime wedges.
Notes
For best results, consider marinating overnight and ensure the skillet is hot before adding the chicken.
