Ingredients

  • 4 oz (about 1 cup) fettuccine, linguine, or spaghetti
  • 4-6 large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1-2 cloves garlic, minced
  • 1/4 cup heavy cream
  • 1/4 cup chicken or vegetable broth
  • 1 tbsp grated Parmesan cheese, plus extra for serving
  • 1 tbsp fresh parsley, chopped (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes (optional)


Instructions

  1. Cook the pasta according to the package directions until al dente. Reserve about 1/4 cup of pasta water before draining.
  2. Pat the shrimp dry and season with salt and black pepper.
  3. Heat olive oil in a small skillet over medium heat. Add the minced garlic and cook for 30-60 seconds until fragrant.
  4. Add the shrimp and cook for 1-2 minutes per side until pink and opaque. Remove the shrimp and set aside.
  5. Pour the heavy cream and broth into the same skillet and bring to a gentle simmer. Add red pepper flakes if desired.
  6. Stir in the grated Parmesan cheese until melted and smooth.
  7. Add reserved pasta water a little at a time if needed to loosen the sauce.
  8. Return the cooked pasta and shrimp to the skillet and toss until evenly coated.
  9. Taste and adjust with additional salt and black pepper if needed.
  10. Serve immediately with fresh parsley and extra Parmesan cheese.

Notes

For the best flavor, use freshly grated Parmesan cheese and avoid overcooking the shrimp. Add spinach, mushrooms, or cherry tomatoes for extra vegetables. Serve immediately while the sauce is creamy.
