Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Prepare the chicken: Pat the chicken breasts dry and season both sides with salt and pepper.
  2. Sear the chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and sear them until golden brown on both sides, about 5-7 minutes per side. Remove the chicken and set aside.
  3. Create the sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan.
  4. Add flavors: Stir in the sun-dried tomatoes, dried basil, and oregano. Allow the sauce to simmer for about 5 minutes until it thickens slightly.
  5. Combine chicken and sauce: Return the chicken to the skillet, cover, and let it simmer in the sauce for another 10 minutes.
  6. Serve and garnish: Once cooked through, serve the chicken topped with the creamy sauce and a sprinkle of freshly chopped parsley.

Notes

Ensure chicken breasts are of equal thickness for even cooking. This recipe can be prepped ahead of time.
