Ingredients
- 2 boneless, skinless chicken thighs (or breasts if preferred)
- 1 cup low-carb barbecue sauce
- 1 tablespoon olive oil

- 1 cup cauliflower rice (fresh or frozen)
- 1/2 cup bell peppers, diced
- 1/2 cup green onions, chopped
- 1/4 cup shredded cheddar cheese

Instructions
