A cozy family favorite, these enchiladas are easy to prepare and perfect for weeknights.
Ingredients
- 1 pound ground beef
- 1 onion, finely chopped
- 2 cups enchilada sauce (store-bought or homemade)
- 1 cup shredded cheese (cheddar or a blend)
- 8 corn or flour tortillas
- 1 can black beans, drained and rinsed (optional)
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Olive oil, for cooking
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the beef: In a skillet over medium heat, add a splash of olive oil and sauté the chopped onions until soft. Then, add the ground beef to the pan and cook until browned, breaking it apart as it cooks. Stir in the cumin and garlic powder.
- Assemble the filling: If using black beans, add them to the skillet now and mix until well combined; then remove from heat.
- Prepare the tortillas: If stiff, warm them slightly in the microwave to make them easier to roll.
- Fill and roll: Spread a thin layer of enchilada sauce in a baking dish. Spoon a generous amount of the beef mixture onto each tortilla, rolling them tightly seam side down in the dish.
- Top with sauce and cheese: Pour the remaining enchilada sauce over the rolled tortillas and sprinkle cheese on top.
- Bake: Cover the dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Garnish and serve: Let the enchiladas cool for a few minutes before serving, garnished with fresh cilantro if desired.
Notes
Don’t overfill tortillas to avoid breaking. You can assemble the dish in advance and refrigerate it before baking.
