Description

Ingredients

  • 1 pound ground chicken (halal certified)
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped green onions
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (optional for a hint of spice)
  • Salt and pepper to taste
  • Olive oil or cooking spray for frying


Instructions

  1. Prep your ingredients: In a mixing bowl, combine the ground chicken, gluten-free breadcrumbs, parmesan cheese, chopped green onions, eggs, garlic powder, onion powder, paprika, salt, and pepper.
  2. Mix it up: Using your hands or a spatula, mix the ingredients until well combined. Be careful not to overmix; just ensure everything is evenly distributed.
  3. Shape the fritters: Scoop a handful of the mixture and shape it into patties (about 2-3 inches in diameter). Lay them on a parchment-lined tray.
  4. Heat the pan: In a large skillet, heat a drizzle of olive oil over medium heat. You want enough oil to coat the bottom of the pan but not so much that the fritters are submerged.
  5. Cook the fritters: Place the patties in the skillet, leaving some space between them. Cook for about 4-5 minutes on one side, or until golden brown, then flip and cook for another 3-4 minutes on the other side.
