Ingredients
- 1 pound ground chicken (halal certified)
- 1 cup gluten-free breadcrumbs
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped green onions
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika (optional for a hint of spice)
- Salt and pepper to taste
- Olive oil or cooking spray for frying
Instructions
- Prep your ingredients: In a mixing bowl, combine the ground chicken, gluten-free breadcrumbs, parmesan cheese, chopped green onions, eggs, garlic powder, onion powder, paprika, salt, and pepper.
- Mix it up: Using your hands or a spatula, mix the ingredients until well combined. Be careful not to overmix; just ensure everything is evenly distributed.
- Shape the fritters: Scoop a handful of the mixture and shape it into patties (about 2-3 inches in diameter). Lay them on a parchment-lined tray.
- Heat the pan: In a large skillet, heat a drizzle of olive oil over medium heat. You want enough oil to coat the bottom of the pan but not so much that the fritters are submerged.
- Cook the fritters: Place the patties in the skillet, leaving some space between them. Cook for about 4-5 minutes on one side, or until golden brown, then flip and cook for another 3-4 minutes on the other side.
- Drain and serve: Once cooked, place the fritters on a paper towel to drain the excess oil. Serve warm with your favorite dipping sauce or on a bed of fresh greens.
