Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/3 cup olive oil
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 cup plain breadcrumbs
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 lemon (zested and juiced)
  • Fresh parsley, chopped (for garnish)
  • Optional: 1 cup cherry tomatoes or sliced mushrooms to roast alongside the chicken


Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish large enough to fit the chicken in a single layer.
  2. In a bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, Italian seasoning, smoked paprika, salt, and pepper. Stir in the grated Parmesan and breadcrumbs until the mixture is slightly crumbly.
  3. Pat the chicken dry with paper towels. Brush each breast with a thin layer of olive oil, then press the Parmesan-breadcrumb mixture onto both sides so it adheres well.
  4. Place the chicken in the prepared dish. If using vegetables like cherry tomatoes or mushrooms, nestle them around the chicken to roast. Bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is golden.
  5. For extra browning, broil on high for 1–2 minutes—watch carefully so the topping doesn’t burn.
  6. Let the chicken rest 5 minutes before slicing. Garnish with chopped parsley and serve.
