A warm and hearty crockpot dish featuring garlic herb chicken and mixed vegetables, perfect for cozy evenings.
Ingredients
- 4 chicken breasts (or thighs)
- 4 cups of mixed vegetables (like carrots, potatoes, and green beans)
- 4 cloves of garlic, minced
- 1 tablespoon of dried oregano
- 1 tablespoon of dried thyme
- 1 teaspoon of salt

- 1 cup of chicken broth
- Olive oil for drizzling
Instructions
- Prepare the chicken: Start by placing the chicken breasts at the bottom of the crockpot. Drizzle some olive oil on top to keep them moist.
- Add the vegetables: Layer the mixed vegetables over the chicken, ensuring they are evenly distributed.
- Seasoning: In a small bowl, mix the minced garlic, oregano, thyme, salt, and pepper together. Sprinkle this seasoning mix over the chicken and veggies.
- Add broth: Pour the chicken broth into the pot, making sure not to wash away the herbs.
- Cook: Cover the crockpot and set it to cook on low for 360 minutes or high for 240 minutes.
- Serve: Once the cooking time is up, shred the chicken in the pot for added flavor or leave it whole. Serve warm and enjoy.
