Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup spinach (fresh or frozen, thawed and drained)
  • 2 cloves garlic (minced)
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly season the chicken breasts with salt, pepper, onion powder, and paprika.
  3. Heat a drizzle of olive oil in a skillet over medium-high heat. Sear the chicken breasts for about 3-4 minutes on each side, until they are golden brown.
  4. Mix the softened cream cheese, shredded cheddar, minced garlic, and spinach together until well combined.
  5. Carefully slice a pocket into the side of each chicken breast and fill them generously with the cream cheese mixture.
  6. Place the stuffed chicken breasts in a baking dish and cover with foil. Bake for 20-25 minutes until cooked through.
  7. Serve and enjoy with your favorite side dishes.

Notes

Use room temperature cream cheese for easier mixing. Check chicken for doneness with a meat thermometer.
