Ingredients
- 4 boneless, skinless chicken breasts
- 8 ounces cream cheese (softened)
- 1 cup shredded cheddar cheese
- 1 cup spinach (fresh or frozen, thawed and drained)
- 2 cloves garlic (minced)
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly season the chicken breasts with salt, pepper, onion powder, and paprika.
- Heat a drizzle of olive oil in a skillet over medium-high heat. Sear the chicken breasts for about 3-4 minutes on each side, until they are golden brown.
- Mix the softened cream cheese, shredded cheddar, minced garlic, and spinach together until well combined.
- Carefully slice a pocket into the side of each chicken breast and fill them generously with the cream cheese mixture.
- Place the stuffed chicken breasts in a baking dish and cover with foil. Bake for 20-25 minutes until cooked through.
- Serve and enjoy with your favorite side dishes.
Notes
Use room temperature cream cheese for easier mixing. Check chicken for doneness with a meat thermometer.
