Ingredients

  • 2 cups pasta (fettuccine or rotini)
  • 1 cup cooked chicken, diced
  • 1/2 cup Caesar dressing
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Optional: croutons for added crunch


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside to cool.
  2. Prepare the chicken: If you haven’t pre-cooked the chicken, grill or boil it until fully cooked, then dice it into bite-sized pieces.
  3. Combine ingredients: In a large bowl, combine the cooked pasta, diced chicken, Caesar dressing, and half of the Parmesan cheese. Stir gently until well combined.
  4. Season: Add salt and pepper to taste. Then fold in the chopped parsley and the remaining Parmesan cheese.
  5. Serve: Transfer the salad to a serving dish. Top with croutons for extra crunch, if desired, and serve immediately.
