Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts generously with Cajun seasoning on both sides.
  2. Sear the chicken in a large skillet with olive oil over medium heat for 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. Sauté the chopped onion in the same skillet for 2-3 minutes until soft, then stir in the minced garlic for another minute.
  4. Make the cream sauce by adding chicken broth, scraping up brown bits, and letting it simmer for 2 minutes. Stir in heavy cream and Parmesan until thickened.
  5. Combine the chicken back into the skillet, coat it in the sauce, and heat for an additional 2 minutes. Garnish with fresh parsley before serving.

Notes

For a milder flavor, reduce Cajun seasoning. Ensure chicken reaches an internal temperature of 165°F (75°C).
