A hassle-free and flavorful meal perfect for busy nights, combining tender chicken, bell peppers, and spices all cooked in a crockpot.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 can diced tomatoes with green chilies
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 tablespoon paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, guacamole, or fresh cilantro
Instructions
- Prepare the ingredients by slicing the bell peppers and onion.
- Layer in the crockpot by placing the chicken breasts at the bottom, followed by the sliced peppers, onion, and diced tomatoes with their juices.
- Season the dish using a small bowl to mix chili powder, cumin, paprika, salt, and pepper and sprinkle it over the chicken and vegetables.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
- Shred the chicken with two forks and mix it back into the crockpot with the veggies and sauce.
- Serve warm with your choice of toppings, in warm tortillas or over rice.
Notes
For best results, use boneless, skinless chicken breasts but thighs can also be used. Adjust spice levels to your preference.
