Ingredients
- 8 ounces of rotini pasta
- 1 cup dill pickles, diced
- 1 cup cherry tomatoes, halved
- ½ cup red onion, finely chopped
- 1 cup shredded cheddar cheese
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons pickle juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water.
- Mix the cooled pasta with diced pickles, cherry tomatoes, red onion, and shredded cheddar cheese in a large bowl.
- Prepare the dressing by whisking together mayonnaise, Dijon mustard, pickle juice, salt, and pepper in a separate bowl.
- Chill the salad covered in the refrigerator for at least 30 minutes before serving.
