A comforting dish of tender chicken smothered in rich, creamy gravy, perfect for family gatherings.
Ingredients
- 4 chicken thighs (bone-in and skin-on)
- 1 cup all-purpose flour
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups milk
- 4 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: Fresh parsley for garnish
Instructions
- Prep the chicken: Season the chicken thighs with salt and pepper. Dredge each thigh in flour, shaking off any excess.
- Brown the chicken: In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken thighs skin-side down, and cook until golden brown (about 5-7 minutes). Flip and repeat. Once browned, transfer the chicken to a plate.
- Sauté onions and garlic: In the same skillet, add the remaining butter. Sauté the chopped onion until translucent, then add minced garlic and cook for an additional minute.
- Make the gravy: Slowly whisk in the chicken broth, scraping up any browned bits from the skillet. Then whisk in the milk and bring the mixture to a simmer.
- Return chicken to skillet: Place the chicken back into the skillet, reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
- Serve: Once done, remove the cover and allow the gravy to thicken slightly. Serve the chicken smothered in gravy, garnished with freshly chopped parsley.
Notes
For a thicker gravy, mix a tablespoon of cornstarch with cold water and whisk it into the gravy during the last few minutes of cooking.
