Ingredients

  • 2 pieces of salmon fillets (about 6 oz each)
  • 1 cup jasmine or brown rice
  • 2 cups water or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup of broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup of shredded carrots
  • 1 avocado, sliced
  • 2 tablespoons soy sauce or tamari (for a gluten-free option)
  • 1 tablespoon sesame seeds (optional)
  • Fresh cilantro, for garnish (optional)


Instructions

  1. Prepare the rice: Rinse your rice under cold water until the water runs clear. In a medium saucepan, combine the rice and 2 cups of water or vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes. Once done, set aside.
