These Speedy Lentil Sloppy Joes are a quick, hearty, and satisfying vegan twist on the classic sandwich. Made with protein-packed lentils simmered in a rich tomato-based sauce and served on toasted whole-wheat buns, they’re perfect for busy weeknight dinners.
Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 (15-ounce) can lentils, rinsed and drained
- 1 (15-ounce) can crushed tomatoes
- 1/4 cup ketchup
- 1 tbsp yellow mustard
- 1 tbsp apple cider vinegar
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt, to taste
- Black pepper, to taste
- 4 whole-wheat hamburger buns, toasted
- Optional toppings: pickles, sliced red onion, vegan cheese slices
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and bell pepper and cook for 5-7 minutes until softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the lentils, crushed tomatoes, ketchup, mustard, apple cider vinegar, chili powder, and smoked paprika.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
- Season with salt and black pepper to taste.
- Spoon the lentil mixture onto toasted hamburger buns.
- Add pickles, sliced red onion, or vegan cheese if desired.
- Serve immediately and enjoy.
Notes
Store leftover lentil mixture in an airtight container in the refrigerator for up to 4 days. It also freezes well for up to 3 months. Serve with a side salad, roasted potatoes, or sweet potato fries for a complete meal.
