Description

A seasonal comfort dish featuring crispy, golden chicken breasts with a sweet and tangy sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup flour (gluten-free if desired)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 large eggs
  • 1 cup breadcrumbs (gluten-free if necessary)
  • ½ cup grated parmesan cheese
  • ½ cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • Juice of ½ lemon
  • Fresh parsley, for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness (about ½ inch).
  3. In a shallow bowl, combine the flour, garlic powder, onion powder, paprika, salt, and pepper.
  4. Beat the eggs in another bowl.
  5. Mix the breadcrumbs and parmesan cheese in a third bowl.
  6. Dredge each chicken breast in the flour mixture, coating evenly.
  7. Dip it into the beaten eggs, letting the excess drip off.
  8. Coat the chicken in the breadcrumb mixture, pressing gently to adhere.
  9. Heat ½ inch of oil in a large skillet over medium heat. Once hot, carefully add the chicken breasts.
  10. Fry for about 4-5 minutes on each side or until golden brown and cooked through.
  11. Place the chicken on a baking sheet and bake in the preheated oven for 10 minutes.
  12. Whisk together the mayonnaise, honey, Dijon mustard, and lemon juice in a small bowl.
  13. Remove the chicken from the oven, drizzle the sauce over the top, and garnish with fresh parsley.

Notes

To ensure the chicken stays juicy, pound it to even thickness and avoid overcooking. An instant-read thermometer is helpful; the internal temperature should reach 165°F (74°C).
