A cozy fall favorite, this Crispy Malibu Chicken is layered with ham and gooey Swiss cheese, drizzled with sweet honey mustard.
Ingredients
- 4 boneless, skinless chicken breasts
- 4 slices of Swiss cheese
- 4 slices of ham (halal)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (for a gluten-free option, use gluten-free breadcrumbs)
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon Dijon mustard
- 2 tablespoons honey
- Cooking oil (for frying)
Instructions
- Prepare the chicken: Butterflied the chicken breasts by slicing them horizontally, but not all the way through. Open them like a book. Season both sides with salt, pepper, garlic powder, and onion powder.
- Layer the filling: Place a slice of ham and a slice of Swiss cheese inside each butterflied chicken breast. Close the chicken back up and secure it with toothpicks if necessary.
- Breading setup: Set out three dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each stuffed chicken breast in the flour, shaking off excess. Then dip into the egg, allowing any excess to drip off, and finally coat with breadcrumbs.
- Heat the oil: In a large skillet, heat enough cooking oil over medium-high heat for frying.
- Fry the chicken: Once the oil is hot, carefully add the breaded chicken to the skillet. Cook for about 4-5 minutes on each side or until golden brown and the chicken is cooked through (internal temperature of 165°F).
- Make the honey mustard sauce: In a small bowl, mix together Dijon mustard and honey until well combined.
- Serve: Remove toothpicks, slice the chicken, and drizzle with the honey mustard sauce before serving.
Notes
To ensure even cooking, use a meat mallet to pound the chicken breasts to an even thickness before breading. For extra crispiness, freeze the breaded chicken for 15-20 minutes before frying.
