Ingredients
- 2 fillets of white fish (cod, haddock, or tilapia)
- 1 cup breadcrumbs (gluten-free if desired)
- 1/2 cup all-purpose flour (or gluten-free flour)
- 1 egg, beaten
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions
- Prep the fish: Pat the fish fillets dry with a paper towel.
- Prepare the coating: Set up three shallow bowls: flour seasoned with salt, pepper, and garlic powder; beaten egg; and a mixture of breadcrumbs, lemon zest, parsley, dill, and paprika.
- Coat the fish: Dredge fillets in flour, dip into egg, then press into breadcrumb mixture.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Air fry the fish: Spray the basket with olive oil, place fillets without touching, spray tops, and cook for 8-10 minutes flipping halfway until golden brown.
- Serve and enjoy: Remove fish, serve hot with lemon wedges.
