Ingredients
- 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup of grated Parmesan cheese
- 1 cup of breadcrumbs (use gluten-free if preferred)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 large eggs, beaten
- Cooking spray or olive oil spray
Instructions
- Prepare the coating: In three separate bowls, place flour (or gluten-free alternative), beaten eggs, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Coat the chicken: Dip each piece of chicken into the egg mixture, allowing excess to drip off, then coat it with the breadcrumb mixture.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Arrange chicken bites: Spray the air fryer basket with cooking spray and place the coated chicken bites in a single layer. Spritz with more cooking spray.
- Air fry: Cook for 10-12 minutes or until golden brown and crispy, shaking the basket halfway through.
- Serve: Remove from the air fryer, let rest for a few minutes, and serve with your favorite dipping sauce.
