A comforting dish of crispy bacon and creamy cheese loaded into baked russet potatoes, perfect for fall gatherings.
Ingredients
- 4 large russet potatoes
- 8 slices of halal bacon
- 1 cup shredded cheddar cheese (or a cheese blend of your choice)
- ยฝ cup sour cream
- 4 green onions, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: additional cheese, crispy fried onions, jalapeรฑos
Instructions
- Preheat the oven to 400ยฐF (200ยฐC).
- Prepare the russet potatoes by scrubbing, drying, and piercing with a fork.
- Bake the potatoes for about 45-60 minutes until tender.
- Cook the halal bacon in a skillet over medium heat until crispy, about 7-10 minutes.
- Transfer the bacon to a paper towel, crumble, and set aside.
- Combine cheddar cheese, sour cream, green onions, and half of the crumbled bacon in a bowl.
- Stuff the baked potatoes with the cheese and bacon mixture.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes.
- Garnish with remaining bacon and optional toppings. Serve hot!
Notes
For extra crispy potatoes, bake directly on the oven rack. To mix flavors, try different types of cheese.
