Ingredients
- 4 boneless, skinless chicken breasts
- Salt and black pepper (to taste)
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup sun-dried tomatoes (drained and chopped)
- 2 cups fresh spinach (washed and chopped)
- 1 teaspoon Italian seasoning
- Fresh basil leaves (for garnish)
Instructions
- Season the chicken breasts generously with salt and black pepper.
- Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and sear for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
- Reduce the heat to medium-low in the same skillet and add the minced garlic. Sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until well combined.
- Incorporate the chopped sun-dried tomatoes and Italian seasoning, mixing well.
- Return the seared chicken to the skillet, allowing it to soak up the flavors, then toss in the fresh spinach and stir until wilted.
- Garnish with fresh basil leaves and serve hot, preferably over pasta or with crusty bread.
Notes
For best results, do not overcook the chicken. Fresh ingredients enhance the flavor, and the sauce thickness can be adjusted by simmering longer.
