Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon butter
- 8 ounces mushrooms (sliced, such as cremini or button)
- 4 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and freshly ground pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
- Prepare the chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
- Sear the chicken: In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the mushrooms: In the same skillet, add butter. Once melted, add the sliced mushrooms. Sauté for about 5 minutes or until they are browned and tender.
- Add aromatics: Stir in the minced garlic and Italian seasoning, cooking for an additional minute until fragrant.
- Make the cream sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. Allow it to thicken slightly.
- Combine everything: Return the cooked chicken to the skillet, spooning the creamy sauce over it. Let it simmer together for about 2-3 minutes.
- Garnish and serve: Sprinkle with fresh parsley before serving. This dish pairs wonderfully with rice or pasta.
