Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 8 ounces mushrooms (sliced, such as cremini or button)
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground pepper (to taste)
  • Fresh parsley (chopped, for garnish)


Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Sear the chicken: In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

  6. Combine everything: Return the cooked chicken to the skillet, spooning the creamy sauce over it. Let it simmer together for about 2-3 minutes.
  7. Garnish and serve: Sprinkle with fresh parsley before serving. This dish pairs wonderfully with rice or pasta.
