Ingredients
- 2 chicken breasts, diced
- 8 ounces pasta (penne or fettuccine)
- 1 tablespoon Cajun seasoning (or to taste)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup diced tomatoes
- Salt and pepper to taste

Instructions
- Cook the Pasta: Begin by boiling water in a large pot and adding a pinch of salt. Once boiling, toss in the pasta and cook according to the package instructions until al dente. Drain and set aside.
- Season the Chicken: While the pasta is cooking, season the diced chicken breast with Cajun seasoning, salt, and pepper.
