Description

A comforting bowl of Creamy Cajun Chicken Pasta rich in flavor and perfect for chilly evenings.

Ingredients

  • 2 chicken breasts, diced
  • 8 ounces pasta (penne or fettuccine)
  • 1 tablespoon Cajun seasoning (or to taste)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the Pasta: Begin by boiling water in a large pot and adding a pinch of salt. Once boiling, toss in the pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. Season the Chicken: While the pasta is cooking, season the diced chicken breast with Cajun seasoning, salt, and pepper.
  3. Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and sauté until fully cooked, approximately 7-10 minutes. Remove the chicken from the skillet and set aside.
  4. Make the Creamy Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream, bringing it to a gentle simmer. Stir in the grated Parmesan cheese and diced tomatoes, mixing well until the cheese has melted and the sauce is creamy.
  5. Combine Everything: Add the cooked pasta and sautéed chicken back into the skillet. Toss everything together to combine and heat through for a couple of minutes.
  6. Serve: Garnish with fresh parsley before serving, and enjoy your Cozy Creamy Cajun Chicken Pasta!

Notes
