Ingredients
- 8 oz fettuccine pasta
- 1 lb chicken breast, diced
- 2 tbsp Cajun seasoning
- 2 cups heavy cream
- 1 cup chicken broth
- 1 cup bell peppers, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions
- Cook the pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions. Drain and set aside.
- Season the chicken: While the pasta cooks, season the diced chicken with Cajun seasoning, ensuring it’s evenly coated.
- Sauté the chicken: In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Prepare the vegetables: In the same skillet, add the diced onion and sliced bell peppers. Sauté until softened, approximately 4-5 minutes. Add the garlic and cook for an additional minute until fragrant.
- Create the sauce: Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for about 3-4 minutes, allowing the sauce to thicken slightly.
- Combine: Return the chicken to the skillet and add the cooked pasta, tossing to coat all the ingredients in the creamy sauce. Cook for another 2-3 minutes, making sure everything is heated through.
- Garnish and serve: Sprinkle fresh parsley over the top before serving for a lovely pop of color and freshness.
