Ingredients
- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup uncooked rice (white or brown)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken pieces with salt, pepper, and Cajun seasoning.
- Add the chicken to the skillet and sauté until golden brown and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the uncooked rice, making sure it’s well-coated in the oil and onion mixture.
- Gradually pour in the chicken broth, stirring to combine.
- Bring the mixture to a simmer, cover, and lower the heat.
- Cook for about 15-20 minutes or until the rice is tender.
- Remove the lid and stir in the heavy cream.
- Add the cooked chicken back to the skillet and stir well until all the ingredients are combined.
- Adjust seasoning if necessary, topped with chopped parsley before serving.
Notes
Use fresh ingredients for the best flavor and adjust cook times if using brown rice.
