Description

Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup uncooked rice (white or brown)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken pieces with salt, pepper, and Cajun seasoning.
  3. Add the chicken to the skillet and sauté until golden brown and cooked through, about 5-7 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the diced onion and cook until softened, about 3-4 minutes.
  6. Add the minced garlic and cook for an additional minute until fragrant.
  7. Stir in the uncooked rice, making sure it’s well-coated in the oil and onion mixture.
  8. Gradually pour in the chicken broth, stirring to combine.
  9. Bring the mixture to a simmer, cover, and lower the heat.
  10. Cook for about 15-20 minutes or until the rice is tender.
  11. Remove the lid and stir in the heavy cream.
  12. Add the cooked chicken back to the skillet and stir well until all the ingredients are combined.
  13. Adjust seasoning if necessary, topped with chopped parsley before serving.
