Ingredients
- 2 large chicken breasts
- 1 cup almond flour or pork rinds for breading
- 1/2 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce (low-carb if possible)
- 1/2 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C) and slice the chicken breasts in half horizontally.
- Combine the almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a shallow bowl.
- Dredge each chicken breast slice in the breading mixture and place on a baking sheet.
- Bake for about 25-30 minutes until golden brown and cooked through.
- Add marinara sauce and shredded mozzarella cheese over the chicken, then bake for an additional 5-7 minutes until cheese is melted.
- Garnish with fresh basil and serve alongside a green salad or steamed vegetables.
