Ingredients

  • 2 large chicken breasts
  • 1 cup almond flour or pork rinds for breading
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce (low-carb if possible)
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil for garnish


Instructions

  1. Preheat the oven to 375°F (190°C) and slice the chicken breasts in half horizontally.
  2. Combine the almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a shallow bowl.
  3. Dredge each chicken breast slice in the breading mixture and place on a baking sheet.
  4. Bake for about 25-30 minutes until golden brown and cooked through.
  5. Add marinara sauce and shredded mozzarella cheese over the chicken, then bake for an additional 5-7 minutes until cheese is melted.
